Clafotuis (or Clafouti) is a type of flan made of fruit, normally cherries, baked in a sweet batter. However I was very kindly gifted a bag of Plums and thought their fleshy fruit would lend itself well to this recipe.
- 125ml milk
- 125ml double cream(plus extra to serve unless you prefer ice cream)
- 25g butter
- vanilla essence
- 4 medium eggs
- 170g caster sugar
- 1 tbsp plain flour
- Enough plums to cover the base of dish, quartered and stone removed
- 2 tbsp brown sugar
Preheat the oven to 350F/Gas 4. Place the quartered plums, butter and brown sugar into the over proof dish and bake until golden, stir often to cover in the butter and soften through.
Stir milk, cream and vanilla in a jug and set aside – technically my Nanny would have told me to warm these through first to thoroughly mix and warm the vanilla and cream, but I’ve never noticed a difference just stirring them.
Break eggs into bowl and add sugar, beat until light and fluffy, then fold in the flour.
Add the milk, cream & vanilla mixture, whisk lightly but make sure there is no lumps of flour.
Remove dish from oven and pour over batter mixture, stir to make sure the plums are evenly distributed, bake for 30 minutes or until golden brown. The finished dish should be soft yet no longer runny. Serve with cream or ice cream.
